Happy belated Easter!

Happy Easter and Happy Passover to you! Hope everyone enjoyed their weekend. I had a little slot of time Easter morning before we headed down to my parents and I took advantage of it so I could relax bake. Griffin, however, relaxed all morning. When he heard the camera through the back window, he perked up, but only momentarily. But back to my morning. When I said I had to “bake” before, please know I use that term veerrrrrry loosely because in fact, I picked a dessert recipe to bring to my mother’s that required NO baking.

Matt and I both have vegetable gardening in our blood. That is, to say, that folks on both sides of our families enjoy tending a garden and reaping the rewards of a harvest. My dad has been really into it over the last few years. Maybe it’s his less taxing schedule. (Hello summers off and shorter hours!) Maybe it’s his somewhat newfound solitude. I happened upon a recipe from fitnessmagazine.com that sounded interesting… “Guilt-Free Double Chocolate Brownies.” Um, you had me at “Double Chocolate.” I tried it out this morning (days are so much better when they include brownies before noon!) and I have to say, they’re good. They aren’t Ghirardelli triple chocolate good, but they’re good for having 18 carbs and 111 calories. I like this recipe because you make it all in a sauce pan.

When I started this blog, I imagined it’d be filled with a bunch of posts about this ol’ school house with a few lifestyle and recipe posts mixed in, too. Well, most of my posts are definitely house-oriented, and there have been a few (very few) vacation posts, but I think I’ve slacked on the recipe front. A lot. As in, I’ve yet to post one. I want to change that.

Well, it’s Sunday. That means it’s time to cook. This week, when Wednesday rolled around, I started looking at recipes that I wanted to try for this week. I stumbled upon a recipe for “Knotted Dinner Rolls” and was smitten. The picture made them look amazing, and this girl loves her carbs. I don’t want to show “the professional” picture because it will make my rolls look bad, but you can find it and the original recipe here.

I know what you’re thinking. “Most Amazing Ever? How bold a claim.” I agree with you. Really - I do. Yet, I’ve had two people (one is an incredible baker) tell me that these cookies are the best chocolate chip cookies they’ve ever had so please, be your own judge. It started out as a basic Martha Stewart recipe but I’ve tweaked it here and there to make it my own.

Griffin has become quite accustomed to my baking him fresh dog treats. The spoiled brat! Why yes, yes, I do give in to his demands. Come on, he looks like this. I made 54 of those bad boys the other night. I have a quick (under a half hour) and easy (4 ingredients) recipe of whole wheat flour, all-natural peanut butter, milk and baking powder — they are so much better for him than treats from the store, and way cheaper, too.
